RICE `N EGG SCRAMBLE

INGREDIENTS
  • Beat 3 eggs,
  • salt and pepper to taste.

INSTRUCTIONS
Mix in leftover (1 cup) chicken Rice-a-Roni. Add 1/2 cup crispy fried bacon, broken into small pieces. Scramble in small amount of butter on medium heat. For a change of flavor shake over top hot sauce...and the scrambled eggs recipe is ready to serve...enjoy the breakfast..!

CURRIED SCRAMBLED EGGS

A nice scrambled eggs recipe to try !
INGREDIENTS
  • For 4 servings:
  • 1/3 c. half and half
  • 1 (3 oz.) pkg. cream cheese
  • Dash salt
  • Dash pepper
  • 1 tbsp. butter
  • 1/2-1 tsp. curry powder
  • Hot toast Parsley for garnish

TIPS: You can vary the seasoning according to your own personal preferences. Paprika, lemon pepper, garlic or dried herbs are fine substitutes.
For 2 servings, half of the ingredients.
For 8 servings, double the ingredients.

INSTRUCTIONS
1. In a bowl beat together eggs and half and half.
2. Crumble the cream cheese. Add to egg mixture. Season with salt and pepper.
3. Melt the butter in a skillet. Add curry powder and make sure it blends well with the butter.
4. Pour egg-cream cheese mixture into hot skillet.
5. Reduce heat. Cook slowly, gently stirring and lifting the mixture from sides and bottom of skillet. Cook until set but still moist and creamy.
6. Immediately spoon scrambled eggs onto hot toast. Garnish with parsley.and the scrambled eggs recipe is ready to serve. Enjoy the breakfast !

INGREDIENTS
  • 2 slices bread
  • Scrambled eggs (about 2 eggs per sandwich)
  • Butter & catsup or mustard, if desired

INSTRUCTIONS
Toast bread and spread with butter, catsup or mustard, if desired.
Top with cool scrambled eggs and cover with other slice of toast.
Place on paper napkin and cook, uncovered, 1 minute or until egg steams when bread is lifted. Let stand 1 minute. The scrambled eggs recipe is ready ! Enjoy the breakfast !

SCRAMBLED EGG CASSEROLE

This is a good casserole to fix if you are expecting a lot of guests.

INGREDIENTS
  • 1/4 c. green onions, chopped
  • 3 tbsp. butter
  • 12 eggs, beaten
  • 1 (4 oz.) can sliced mushrooms, drained
CHEESE SAUCE:
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. milk
  • 1 c. (4 oz.) processed American cheese, grated
TOPPING:
  • 1/4 c. butter, melted
  • 2 1/4 c. soft bread crumbs
  • Paprika

INSTRUCTIONS
In a large skillet, melt 3 tablespoons butter; saute ham and onion.
Add eggs; cook over medium heat until eggs are set. Set aside while preparing Cheese Sauce.
To prepare Cheese Sauce, melt butter in saucepan over low heat; stir in flour, salt and pepper until smooth. Reduce heat to low; slowly stir in milk. Stir until thick. Add cheese; stir until melted.
Gently fold scrambled egg mixture and mushrooms into Cheese Sauce.
Pour into a greased 13x9 inch baking dish.

To prepare Topping, in a bowl combine bread crumbs and melted butter.
Stir until crumbs are evenly distributed with butter. Sprinkle over top of egg casserole. Sprinkle paprika over top of crumbs.Bake at 325 degrees for 25 to 30 minutes. Or, if to be served the
next morning, do not bake; cover and refrigerate overnight. Uncover and bake the cold casserole for 35 to 40 minutes. Enjoy the scrambled eggs....

INGREDIENTS
  • 1 egg
  • 1 tbsp. milk or water
INSTRUCTIONS
In a 1 cup glass measure or coffee cup stir together egg and milk or water. Cook on HIGH power 40-45 seconds or on 50% power 1 1/2 minutes. Scrambled egg comes out light and fluffy. The scrambled eggs recipe is ready to serve....enjoy the breakfast !

INGREDIENTS
  • desired amount of eggs
  • 2 tsp. whole milk
  • thinly sliced white American cheese (if desired)

INSTRUCTIONS
Butter the pan and heat until the butter melts. Pour egg yolks into a bowl and scramble into a liquid (must be completely yellow). Combine milk with eggs and scramble until mixed.
When the butter is melted in the pan, add eggs and stir.
Stop for 5 seconds and stir again. When you see little scrambled eggs in the pan, add cheese (cut up) and stir until no liquid is in the pan (all scrambled). The scrambled eggs recipe is ready to serve and enjoy it for breakfast ! Nice.
